I bought this sharpener two years ago, after I got a Yaxell knife for Christmas, but because the knife is so sharp and the steel so good, I haven't had to use it! All I've done is 'straighten' the blade with a steel rod, until now. I decided to try it out, though, and it does a beautiful job of restoring the 'out-of-the-box' edge. Highly recommended.
I love Yaxell knives. Having used a Yaxell Ran 16cm for nearly 15 years, buying the Kiritsuke was a no brainer. They come razor sharp out of the box and the blade is easy to maintain even for a home cook like myself.
